Beetroot rice pilaf
This nutritious beetroot rice pilaf is filled with a mix of different vegetables, making it a vibrant and satisfying option for a side dish or main course. Adding zucchini, bell peppers, and green peas not only boosts the flavors but also provides a lovely contrast to the rich red beetroot.

- Rinse the brown rice thoroughly under cold water and soak it for 30 minutes.
- Peel and grate the beetroot
- Dice the zucchini, red and yellow bell pepper.
- Finely chop the red onion.
- In a medium pot, bring the vegetable broth to a boil, add the rice, reduce to a simmer, cover, and cook until the rice is tender, about 45 minutes.
- After 30 minutes, heat the olive oil in a large skillet over medium heat.
- Add the red onion (if using for human portions) and sauté until translucent.
- Add the grated beetroot, diced zucchini, and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables are just tender, about 10 minutes.
- Stir in the green peas and cook for an additional 5 minutes until everything is heated through.
- Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables.
- For human portions, stir in chopped parsley, and optionally top with crumbled feta cheese and toasted pine nuts for added flavor and texture.
- Serve plain beetroot and vegetable rice to dogs, ensuring it’s at a safe temperature and without any onion or strong seasonings.
