Coconut rice with salmon
This meal combines nutrient-packed salmon with rich coconut rice for a dish that is both nutritious and tasty. Salmon is well-known for its rich amount of omega-3 fatty acids, which are crucial for heart health and aid in joint and cognitive function. Ingredients
- 1 cup (240 mL) - Jasmine or basmati rice
- 1 cup (240 mL) - Coconut milk
- 1 cup (240 mL) - Water
- 1 lb (450 grams) - Salmon fillet
- 1 tbsp (15ml) - oconut oil
- Optional for humans: Salt, pepper, chopped fresh scallions, and a squeeze of lime juice
Directions
- Place the jasmine or basmati rice in a fine mesh sieve and rinse under cold running water until the water runs clear.
- In a medium pot, combine the rinsed rice with the coconut milk and water. Stir the mixture to ensure it's well mixed.
- Place the pot over medium-high heat and bring the mixture to a boil.
- Once boiling, reduce the heat to low. Cover the pot with a lid and let the rice simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- While the rice is cooking, heat the coconut oil in a skillet over medium heat.
- Place the salmon fillet skin-side down in the hot skillet.
- Cook for about 6-7 minutes on one side, then flip the fillet.
- Continue cooking for another 3-4 minutes on the other side, or until the salmon is fully cooked through and flakes easily with a fork.
- Once the salmon is cooked, remove it from the skillet.
- Use a fork to gently flake the salmon into large, bite-sized pieces.
- Remove the pot with the rice from heat and let it sit covered for 5 minutes. This allows the rice to finish steaming and become fluffy.
- Fluff the cooked coconut rice with a fork. Divide the rice among plates or bowls.
- Place the flaked salmon on top of the coconut rice in each serving.
- For the dog's portion, ensure the food is at a safe temperature and serve it plain.
- For human servings, season with salt and pepper, garnish with chopped scallions, and add a squeeze of lime juice for added flavor.

Avoid harmful ingredients: Avoid avocado and anything containing caffeine or alcohol as these can be harmful to your dogs. Onions, garlic, chocolate, grapes and raisins as well as certain nuts can be deadly.
