- 1/4 cup (60g) - Unsweetened peanut butter
- 2 - Eggs
- 1 tsp (5ml) - Baking powder
- 1/4 cup (60ml) - Coconut oil
- 60g (1/4 cup) - Unsweetened yogurt / Greek yogurt
- 1/2 tsp (2.5ml) - Cinnamon (Optional)
Directions
- Grate the carrots.
- Preheat your oven to 350°F / 180°C. Grease a cake tin or line it with parchment paper.
- In a large bowl, whisk together the eggs, coconut oil, and unsweetened peanut butter until well combined.
- Stir in the grated carrots, whole wheat flour, and baking powder.
- Pour the mixture into the prepared cake tin. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely. Once the cake has cooled, spread a thin layer of the yogurt frosting evenly over the top of the cake.
