  • 1 cup (120g) - Whole wheat flour
  • 2 (approx. 4oz / 120g) - Medium carrots
  • 1/4 cup (60g) - Unsweetened peanut butter
  • 2 - Eggs
  • 1 tsp (5ml) - Baking powder
  • 1/4 cup (60ml) - Coconut oil
  • 60g (1/4 cup) - Unsweetened yogurt / Greek yogurt
  • 1/2 tsp (2.5ml) - Cinnamon (Optional)

Directions

  1. Grate the carrots.
  2. Preheat your oven to 350°F / 180°C. Grease a cake tin or line it with parchment paper.
  3. In a large bowl, whisk together the eggs, coconut oil, and unsweetened peanut butter until well combined.
  4. Stir in the grated carrots, whole wheat flour, and baking powder.
  5. Pour the mixture into the prepared cake tin. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely. Once the cake has cooled, spread a thin layer of the yogurt frosting evenly over the top of the cake.
  7. Slice the cake and share it with your dog. For the human portion, you could sprinkle cinnamon over or even drizzle honey over the slice of cake.
